BC restaurant industry fine with trans ban – A promised provincial government ban on trans fat in restaurants in British Columbia will not be a hardship for the industry, according to the president of the BC Restaurant and Foodservices Association.

“What they’ve basically done is put a benchmark for everybody to reach by 2010, and that just may accelerate what’s already happening anyway, says Ian Tostenson. He was reacting to a pledge in the government’s throne speech to ban the use of trans fat in food prep in the province’s schools, restaurants and foodservice establishments by 2010.

American public health body takes stance on transThe American Public Health Association (APHA) recently adopted 20 policies addressing a range of public health issues. One of them directly addresses trans fat:

The APHA “urges federal, state and local lawmakers to require nutrition facts labeling on trans fatty acids on all commercial food products, to ban and monitor the use of partially hydrogenated oils in restaurants and to develop initiatives to bar the sale or availability of foods with more than 2 percent of industrially produced trans fat.

Canola proteins make meat more succulent A new study out of Memorial University in St. John’s, NF suggests proteins from canola could boost the moisture and succulence of processed meats. Researchers prepared canola protein hydrolysates using commercial enzymes and report improved water holding capacity in the meat, along with a high antioxidant activity.

Spray a little organic canola oil in the pan – Pam cooking spray has come out with three new versions: professional, organic olive oil and organic canola oil. The professional version is specially formulated for high-heat cooking, and the new varieties cost about 20 cents more per ounce.
